Shrimp and Artichoke Pizza
- 4 Bays English Muffins, split and lightly toasted - 1 (6.5 ounce) jar marinated artichoke hearts - 1/2 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme leaves - 1/2 cup pizza sauce - 1/2 cup mozzarella or smoked mozzarella cheese, shredded - 1/4 cup parmesan cheese, grated - 4 ounces (3/4 cup) small to medium cooked shrimp, thawed if frozen - Small fresh thyme sprigs (optional)
Transfer 2 tablespoons of the artichoke marinade in a small bowl. Drain remaining marinade from artichokes; coarsely chop artichokes and add to bowl. Add shrimp and thyme; mix well. Place toasted muffin halves cut sides up on a baking sheet; top with pizza sauce, the shrimp mixture and both cheeses. Broil 4 to 5 inches from heat source for 3 to 4 minutes or until cheese is melted and muffins are hot. Garnish with thyme sprigs, if desired.
