Bays Hearty Breakfast Muffin
- 4 Bays English Muffins, split and lightly toasted
- 1 tablespoon butter
- 1/2 cup red bell pepper, chopped
- 6 eggs, or 3 eggs and 3 egg whites
- 1 green onion, thinly sliced
- 1/8 teaspoon black pepper, freshly ground
- 1/2 teaspoon salt
- 4 slices Cheddar or American Cheese, (optional)
- 8 slices bacon, cooked crisp and drained
Melt butter in a large nonstick skillet over medium heat. Add red pepper; cook 4 minutes, stirring occasionally. Beat eggs; stir in green onion, salt and pepper. Add to skillet; cook, stirring frequently until eggs are soft set. Spread toasted muffins with additional butter if desired. Spoon egg mixture onto bottoms of muffins; top each with optional cheese slice, 2 slices bacon, and close sandwiches with muffin tops.
Serves 4
